"hotel introduces own procurement strategy"

The challenge

Previously part of a multi-national corporation this well established, large hotel based in central London was taken into private ownership. The client needed the hotel to continue to trade while this transition took place. Consequently, the supply chain needed to be maintained but re-negotiated whilst ensuring there were no disruption to customers and no negative financial impact to the hotel.

Suppliers had been appointed locally but with poor purchasing protocols, this together with resistance to our involvement and major changes within the accounts team meant that there was very little information available regarding the current supply agreements.

The solution

Acquire met with each supplier and arranged for briefing sessions after which a full tendering exercise was competed. To complement the tendering exercise a secondary project was undertaken with the hotel’s finance team to implement our epsys e-procurement system.

The result

We managed the whole supplier review process and our findings were accepted and implemented with epsys being introduced to manage future supply agreements effectively. Our operational team are constantly reviewing the hotel’s performance and we have also undertaken detailed service reviews that challenged the day-to-day kitchen custom and practice. Our review recommendations have been implemented resulting in improvements in the menu and margin.
